Our company has made a new contract and added some things our previous one did not have. One thing is that we agree to any future changes and or additions. Is this legal? We were pretty much told we needed to sign it or we would be out of work.

It’s legal if you’re not currently under contract, or the contract does not overlap an existing contract. Without an existing contract to protect you in this event, then employment is at will, and they can fire you for refusing to sign it.
Yes, an employee handbooks is by no means meant to be all-inclusive.
